Black Bean & Eggs Breakfast Burritos
Am I the only one who has trouble thinking of yummy breakfast foods? I struggle on a nearly daily basis to prepare easy and quick breakfasts for my family. It seems that we’re almost always running out the door and I need to throw together something nutritious and yummy.
Add to that the difficulty I have with eggs. I never liked them growing up and even with my husband prompting me to experiment with them more, I still don’t particularly enjoy them.
So when I had the harebrained idea to create a breakfast burrito with eggs as the base, I was a bit wary. I don’t usually deviate much from the tried and true breakfast items (i.e. eggs, cereal, toast, fruit, pancakes on occasion, etc.) but I thought I’d break out of my comfort zone and try something new.
I always have canned black beans in my pantry and eggs in my fridge, so I grabbed those two ingredients and set to work on my new breakfast idea. I added in a small amount of green chili, salt & pepper and shredded cheese. Throw it into a warm tortilla with salsa on top and you’re done.
I have to admit, my first bite was less than exciting. But I took another bite and another and another and was pleasantly surprised by the great flavor combination. It was something I’d definitely make again, especially on those mornings when I’m facing the daunting task of breakfast making!

What You Need:
- 1 T. Butter (or Vegetable Oil)
- 5 Eggs
- 1/2 can Black Beans (rinsed and drained)
- 2 T. Green Chili
- 1/2 C. Shredded Cheese
- Salt & Pepper to taste
Open the black bean and place in a colander. Rinse well with running water. Set aside. Melt the butter in a cast iron skillet (I LOVE this one that my husband bought me as a Christmas present). Beat the eggs in a medium bowl. Pour eggs and green chili into the melted butter and scramble slightly. Add the black beans and salt & pepper and finish cooking all together until eggs are done. Place egg mixture in a warm tortilla and top with shredded cheese and salsa. Wrap burrito style and enjoy!
